Apple Spice Muffins

Ingredients

  • 4 cups oats (divided)
  • 2 Tbs baking powder
  • 1 Tbs cinnamon*
  • 1 tsp nutmeg* 
  • 2 very ripe bananas 
  • 3/4 cup raisins or pitted dates, soaked in hot water for 10 minutes, drained.
  • 15 oz of unsweetened applesauce**
  • 2 tsp vanilla 
  • A little maple syrup for brushing on muffins after baking 
  • 1 cup diced apples 

Preparation

  1. Preheat oven to 375° 
  2. Add 2 cups oats, baking powder, cinnamon and nutmeg to food processor and run for a minute to mix and turn oats into flour.
  3. Then add, bananas, raisins or dates, applesauce, and vanilla.
  4. Process until all is well combined, then transfer to a large bowl and add remaining 2 cups of oats and apples.
  5. Stir with spoon until it is all mixed. 
  6. Fill cups 2/3 full and bake for about 15-17 minutes. Until firm on top.

Makes 18-24 muffins. 

*You can skip the cinnamon and nutmeg and add cocoa and sliced almonds.
**Or you can add pumpkin instead of applesauce. Use your imagination to create lots of flavors!
