Oven Roasted Potatoes
2 pounds red, gold or sweet potatoes (or a combination), diced small
1 sweet yellow onion or red onion, diced
10 cloves of garlic
1 tsp. seasoned salt or sea salt
1/4 tsp. pepper, optional
1/2 cup of vegetable broth or water
Put everything in a sprayed 13x9" dish.
Cover with foil and bake at 400 for 40 minutes.
Remove foil and stir.
Continue baking for 20-25 minutes until potatoes are tender and browned on top, stirring occasionally.
