Great on baked potatoes with steamed broccoli.
1 medium red potato, quartered
1/4 of a small sweet onion
1 large carrot, peeled and cut in half
1/2 cup raw cashews
1 Tblsp. fresh lemon juice
1 tsp.+ salt
1 tsp. onion powder
1/2 tsp. garlic powder
Boil vegetables in 3 cups water until tender.
Put vegetables and all other ingredients in blender.
Add 1 cup of the cooking water and blend until very smooth.
Add additional cooking water, as needed, to make a creamy, pourable cheese sauce.
