Peanut Butter Cookies
2 cups dry-roasted peanuts
1 cups whole wheat pastry flour or oats
1/2 cup honey - warmed in microwave until liquidy
1 tsp vanilla
1 tsp salt (omit if peanuts are salted)
Place peanuts and flour in a blender.
Whiz until nuts and flour are the same texture.
Place in mixing bowl with salt.
Mix in the WARM honey and vanilla.
Stir together and then mix with your hands.
Pinch off pieces of dough and roll into balls the size of walnuts. Place on cookie sheet and press flat with hands.
Use a fork to press in the fork marks.
Bake at 350 degrees for about 10 minutes. Watch carefully, they burn easily.
They are done when just beginning to brown on the edges.
