Quick Pasta with Fresh Tomato Sauce

Ingredients

  • 6 large, ripe tomatoes, quartered

  • 1 sweet yellow onion, quartered

  • 8 cloves garlic

  • 2 tsp. salt, or to taste

  • dash of cayenne

  • 2 tsp. maple syrup 

  • 2 cups water

  • 2 cups small, uncooked pasta

Preparation

  1. Put everything, in blender and pulse until onion and tomatoes are chopped finely.

  2. Pour into a large pot and bring to a boil.

  3. Reduce heat and simmer 25 minutes.

  4. Add pasta directly to sauce and cook and stir 3 minutes.

  5. Cover and turn off heat. Let stand 15 minutes and serve.
